Highland cows are a Scottish breed of cattle originating in the Scottish Highlands and the Western islands of Scotland. They were first imported into Canada in the 1880's with the largest populations within Canada now being in the eastern provinces. Their distinctive coats made up of a thick, wooly double layer of hair make them an extremely cold hardy cow!
